故意吧,挑了一張很cliché 的相片。

甚少與人提及我曾赴英修讀禮儀學,並考取了2張相關的證書。因為我不想於朋友聚會裏,為身邊的人構成壓力。直至有朋友叫我參與相關的培訓 - 幫助一群又一群將投身社會的大學生、以及職場上的年青才俊等 - 我才發覺原來學了這門學問,還可以為社會出一點力。當一個社會進步時,人對生活質素、品味、文化修養、社交、企業管理等的要求隨之提高,怎樣行出來讓客戶於初次見面就留下深刻印象:覺得你是「得體」、「大器」,即是marketing 術語中的 ”presentable” ?

認識和學習禮儀之道可建立自尊、自信、社會尊重及人際關係。這些全是我們常說的「軟技能」:外表衣著 、行為、溝通技巧及餐桌禮儀、跨國文化、下午茶禮儀、國際社交及商務禮儀等諸多內容。

其實,對於我來說,是對其他人及文化的基本尊重及自重!

Q&A:

  1. 通常朋友問我,是不是專程去英國學「儀態 」?

嚴格來說也算是的。簡單來說,儀態(posture) 即是肢體的一舉一動,即使學習跳舞也能學到一點兒。而儀態是博大精深的禮儀學其中一門的必修課 。

 

  1. 是不是只限女仕?

不是,無論社交或商務禮儀,對男仕及女仕也有不同的要求。

 

  1. 每當與朋友聚會吃飯,朋友都會群起模仿我的一舉一動。如吃越南菜時,問是否把飯餸夾至女仕的碟上才對?

我想我在英國沒有學這些,但是我們的父母應該有教我們吃飯時不可「飛象過河」、「不可翻起餸菜的底部才吃」、「不可發出嘴吱的聲音」等。這些基本的餐桌禮儀,適用於主流的禮儀規範。

 

  1. 那吃飯的時候,應該由誰埋單?

視乎社交、商務,主要視乎不同的情況而定……

5. 你學禮儀是不是想嫁入豪門? …

Seldom do I talk about my study of the etiquette and the two relevant certificates I got in the U.K., which has usually ended up in stressing my friends out during social gatherings alternatively. Not until was I invited to participate in a youth training on etiquette, I was convinced I could actually help contribute to the community by training peers of university students and society elite.

 

Being “Presentable” is a jargon in marketing.  When a contemporary society  is getting more sophisticated, there is a higher demand in lifestyle, taste, culture nurture, social networking and corporate management.  How to make first and lasting positive image, receive and entertain clients with the utmost of professionalism, savoir-vivre and precision?

 

Understanding and learning the art of etiquette is a way to build and foster your self-esteem, self-confidence, social respect as well as interpersonal relationships. In short, this is the “soft skills” which we always talk about: from dressing, behaviour, communications skills, table manner, intercultural awareness, afternoon tea etiquette, international social manner to business etiquette etc.

 

To ME, etiquette actually means the basic respect and self-respect for others and in a culture aspect.

 

 

Q&A:

  1. Many friends asked me if I went to the UK all the way to learn “posture”?

Yes strictly speaking. Posture is how you act with your body in every single move. Like how you can also pick it up from dancing. Posture is indeed an essential lesson for the art of etiquette. (yes part of it)

  1. Is learning the art of etiquette restricted to ladies only?

No. We do have different requirements for men and women, regardless social networking or business etiquette.

  1. Friends like to follow what I do while we gather and dine. During dining at a Vietnamese restaurant, is that true that gentlemen need to take food to ladies’ plate?

I believe I didn’t pay my tuition fee to learn that in the U.K. However, I guess our parents teach us some basic unlearnt virtue at home. For example, we cannot cross the other end with our chopsticks; never flip the bottom of the plate for serving; be quiet when you chew… all these basic table manners apply across the mainstream etiquette.

  1. Who should settle the bill when dining?

It depends on the situation in different occasions, for example, social or business settings.

  1. Have you planned to learn etiquette for sake of becoming a tai-tai? Well…

到英國學習禮儀學,是我生命中其中一段很好的經驗、人生旅程。除了英國本身保留了大量歷史和文化遺產,學習資源充足,如不同皇宮及博物館均提供大量教材,擴闊眼界。而當我更了解他們的文化,知道他們想法的由來,也提升了與他們溝通的成效。個人的經驗告訴我,當我的談吐行為、習慣、知識及信心與他們沒多大差別時,英國人(外國人) 是會對你有多一份尊重。

Studying etiquette in the U.K. has been one of the vital and rewarding life experiences throughout my life journey. The United Kingdom is an amazing country of history and heritage where one can easily live up with examples and resources like palaces and museums. I am pleased to understand their culture. By understanding more of their thoughts, I have managed to communicate more effectively with the locals. From what I learnt from my experience, somehow  you can earn more respects from the English (or foreigners in general) if you understand, speak and act as if you were part of them (of course, in confidence).

一直至今,男仕的衣著向來都比女仕講究 。

James Bowden 於 Manners for Men 曾把男仕服裝總括和分類為: 步行、騎馬、駕駛、探訪、划船、狩獵、射擊、高球、騎自行車、網球、板球、足球、用膳、抽煙、休閒、賽車、遊艇、西裝、摩托車裝,更說明了應配以各種飾品才算完整的打扮 , 也是說明了於社會上的身份。當然,今日的社會也簡化了很多。

The art of menswear is more sophisticated than women wear by tradition.

James Bowden wrote about the menswear in the <Manners for Men>. The dress code categories include: walking, horse-riding, driving, visit, rowing, hunting, shooting, golf, cycling, tennis, cricket, football, dining, smoking, causal, racing, yachting, formal attire, motorbike.

He also introduced the accessories according to the outfit, which represented the social class status. Of course, nowadays, the dress code is far more simplified.

學習餐桌禮儀,必須辨認刀具及器具的功能,也需要設計餐單,根據餐單擺放餐桌佈置、桌具及酒杯,亦需要學習排位、娛樂、布藝、佈置美學、花卉擺設、作為主持人的責任等學問。

The basics of table manner: to distinguish the tableware and their functions, to design a menu, to set the table with table cloth, setting, tableware and glassware in accordance to the menu. Furthermore, you can imagine you ‘d learn more like seating plan, entertainment, and the art of clothing, the art of design and deco, floral arrangements and the roles and responsibilities of a host.

I was tested by the 7-course setting in both French and English ways. Yeah, and I passed!

Scones are usually put on the side of a cake stand. Alternatively in the centre if there are not many cakes and bites for the day.

商務午餐對於英國(或西方人)而言是有特定的目的。由於重視低調的優雅,不會大魚大肉,更著重建立親切、和藹和彼此關係的信任。 由選擇地點、餐單、座位安排配以身份的關係、飲酒、衣著等,都是一門學問。餐宴過程中,懂得禮儀學的人能迅速透過觀察賓客的點餐及餐桌禮儀技巧等, 對你的背景略知一二。

The British (or westerns in general) prefer business luncheons with a purpose. It aims to elegantly foster relationships and build mutual trusts without excessive extravagance. Once again, It is all about the art of etiquette – from choosing a venue, setting a menu, seating arrangements, drinking and outfits. Sophisticated dinners can easily have a quick glance of your background from how you order and your table manner.

麵飽籃頗精緻,而牛油也有四種,主人是需要主動為客人傳遞麵飽的。

傳統英式是吃主菜,方上沙律。原因是沙律可使口腔清新,才繼續吃其他菜式。

The traditional British way is to serve the main course, followed by the salad.

The salad can freshen up your mouth before the next course.

英國人叫甜品做Pudding,意思與dessert 一樣。

最後是吃芝士盤 (cheese platter),這個傳統,無論我於酒店或英國人家中用餐也是一樣。切芝士連餅乾吃是有特定的方法,否則其他人會覺得你沒有禮貌。

對於倫敦這個城市,香港人絕不陌生,打開旅遊書介紹著名的景點也數之不盡。由於我曾旅居於當地,我希望介紹一些本地人的選擇,帶你用另外一個角度去體驗這個城市。

London is a home for many Hongkongers and tourists. However, I’d like to recommend some interesting places where locals spend their life to you, and let you experience this city in another way like how I spent my life there.

Leighton House Museum

這個位於Kensington的一個隱世寶藏,於1860年代由Sir Frederic Leighton 委任 George Aitcheson興建,藉此展示他多年遊歷歐洲的見識,也是他收藏珍品的心臟及畫室。罕見的“Arab Hall”以中東建築風格為藍本,全以16世紀玻璃瓷磚興建,中央還有小噴泉,難得一見。

You must not miss this hidden gem in Kensington. The museum was built by George Aitcheson for Sir Frederic Leighton in 1860s. This is a lovely studio where Sir Leighton also shared his collection and experience in all parts of Europe. Check out the “Arab Hall” where it was built with the Arabic touch – with glass tiles and a little fountain in the centre – that you can hardly find elsewhere.

Sir Leighton was in love with peacocks – look at the exotic collection beneath the Grand Staircase.

二樓放滿了Sir Leighton 當年畫皇室、貴族的油畫及他的收藏。另一邊則是他的工作室。

The art collection of Sir Leighton was displayed on the 2/F where you can find his work for the royal family and the aristocracy as well as his personal collection. His studio was on the other side.

又星期五了,Londoner其中一個必去之處就是V&A,難得週五也開放至晚上10時的地方,有pop-up performance、特別展覽、餐飲,氣氛一流。

倫敦必到飯堂:Zedel

My Canteen in London: Zedel

 

每次朋友叫我推薦倫敦的餐廳,我一定推介Zedel。它是傳統的法國bistro。價錢很實惠,Art Deco設計,空間偌大,這兒4Course set只須19鎊(包餐酒),難怪日日有人排隊。

Zedel is a restaurant that I ‘d recommend for friends visiting London. It is a classic and spacious French bistro with art deco design but in a much affordable price. Can you imagine you can have your 4-course meal (including wine) with 19 pounds only? Yes indeed – the queue you can see every day counts.

洋蔥湯,很傳統,芝士不太多。

The traditional French onion soup, with good portion of cheese.

主菜是煎帶子,很rustic,帶子很大很鮮味。

Main course: scallops. Rustic, big and fresh!

甜品是我最喜愛的Floating Island with Vanilla Sauce。

鮮為人知的街道,離 Brick Lane 不遠,沒有遊客,但有品味的 Londoner 星期日會步行到這裏買鮮花或看 Vintage 精品。

Columbia Road is a hub for many locals who are of good taste and spending their Sundays with vintage accessories and flowers. It is a hidden district from tourists, not far from Brick Lane.

Angela Flanders 是我最喜愛的小店,她的香水全是手工制,為你度身訂造。

My favourite shop: Angela Flanders – where you can get your handcraft and bespoke perfume!

店內充滿懷舊色彩的設計。

如果有一點肚餓,可步行至Brick Lane 的Beigel Bake 吃 Salt Beef Beigel,價錢是 Oxford Street “Selfridges” 的 1/2,難怪大排長龍!

I’d recommend you for a bite at Brick Lane’s Beigel Bake if you feel like hungry in the middle. 1/2 of the Salt Beef Beigel you can find at “Selfridge” at the Oxford Street. Guess you can tell if it’s a bargain from the queue!

Except Buckingham Palace, Kensington Palace & Tower of London, have you ever visited another grade A world-class heritage architecture which is mostly missed by many tourists?

Make a trip to the Banqueting House, Whitehall – the only remains of the Palace of Whitehall which is significant to the emergence of the neo-classicalism in the history of the British architecture.

可能由於太多電影及電視節目推廣下,這個已有1000歲的市場已經成了潮人必到買餸和享受美饌的地方。價錢非常合理。內裏有多間餐廳,食材取自市場。

You may have seen the Borough Market in many movies and TV shows. The 1000-year old market has become an icon for trendsetters – where you can buy fresh ingredients and produce or enjoy affordable food (ingredients taken fresh from the market).

有一句經典名句: ‘If you are tired of London, you are tired of life’.

到了 West End,無論你於 Covent Garden 欣賞國際知名的藝術展、世界聞名音樂劇或由 Covent Garden 步行至 Seven Dials 購物…目不暇給。

‘If you are tired of London, you are tired of life’.

You can certainly recharge yourself at the West End, where you can spend your day with the world’s leading art exhibitions and musicals in the Covent Garden, or do some shopping at the Seven Dials in a working distance. Love it!

此藝術裝置名為”Heart Beat”,用 10 萬個氣球代表這地方充滿著多元及活力。

“Heart Beat” – the art installation symbolizes the diversity and energy of London with 100,000 giant balloons.

Shaun the Sheep 於 Covent Garden 的展覽,由不同設計師及名人負責設計共 120 個 5 尺高的雕像,展覽過後將拍賣,收入將作慈善用途。
